A few years back, I was looking for a bread recipe that does not need too much sugar. Banana, being natural sweetener, was a good way to begin. When you are unsure what to make for Saturday morning breakfast, banana bread is always a good choice. Now, I sometimes bake on Saturday evening for Sunday mornings.
Best Greek Yogurt Banana Bread Recipe

Yield: 8 servings
Ingredients
* 2 cups all-purpose flour
* 1/2 cup sugar
* 1/4 cup brown sugar
* 1 teaspoon baking soda
* 1/2 teaspoon salt
* 1 1/2 cups of banana (3 very ripe, darkly specked bananas)
* 1/4 cup plain Greek yogurt
* 2 large eggs
* 1/4 cup olive oil
* 2 1/2 teaspoons vanilla extract
* 1 cup chopped walnut, pecans and/or chocolate chips
Instructions
Preheat the oven to 350°F. Line a 9-inch loaf pan with parchment paper (overhanging on the two long sides) then grease the parchment paper with cooking spray.
In a large bowl, whisk together the flour, sugar, brown sugar, salt.
In a separate medium bowl, whisk eggs, olive oil, sugar, vanilla extract, and baking soda.
Add Greek yogurt and 3 mashed ripe bananas.
Add the wet ingredients to the dry ingredients and stir until combined.
Stir in the chopped nuts and/or chocolate chips and put the batter into the loaf pan.
Bake the bread for 50 to 60 minutes, until a toothpick or a chopstick inserted comes out clean/not wet.
Remove the bread from the oven and allow it to cool completely in the pan before using the parchment paper. Once it cooks down, take the bread out of the pan and slice and enjoy!
Important tips for healthy lifestyle:
Be sure to use cooking oils that is healthy for your body. Use extra virgin or cold-pressed olive oil as vegetable oils are highly processed that leave you without any nutrients. If you want to use coconut, peanut, canola, veggie, sunflower, or safflower oil, it has to be EXPELLER PRESSED, and non-GMO.
Make sure that you use cooking spray without propellent. Most common aerosol propellents are nitrous oxide, carbon dioxide, propane, n-butane and isobutane. Propane definitely is not something you would want to bake bread with. Cooking spray from Chosen Foods are a great choice!
